These are so easy: slice a zucchini in half and scoop out the guts. Pulse in food processor with garlic, onion, red pepper and cracker crumbs (I prefer gluten-free Food Should Taste Good). Refill zucchini boats and bake at 350 degrees for 45 minutes. Remove from oven, sprinkle with mozzarella and paprika. Return to oven for an additional 10 minutes.
